When I lived in the south my Nana would make banana pudding when I came over. I have the best memories of eating pudding (or whatever else she had put in the fridge just for my visits) and chatting about school with her at the kitchen table. Today, I had a friend over for lunch and I wanted to make a southern dessert. I remembered this favorite treat and modified a recipe I found online:
8 oz. pkg cream cheese, softened (I use about 6 oz)
14 oz can sweetened condensed milk
3.5 oz pkg instant vanilla pudding mix
2 c. cold milk
8 oz container Cool Whip
3 bananas sliced, 1 banana heated & mashed
half box vanilla wafers, plus a few extra for crushed topping.
1. In large bowl, beat cream cheese until fluffy. Beat in condensed milk, pudding mix, cold milk, and mashed banana until smooth. Fold in 1/2 of whipped topping.
2. Layer: wafers, bananas, pudding, wafers, bananas, pudding (can also line sides of bowl with wafers before adding pudding). Top with remaining whipped topping, and sprinkle with crushed wafers. Chill.
